Donner Kebab


This honestly tastes just like one from a kebab shop! Its so tasty!

Serves 4, 1 syn per portion (heb for pitta bread) (extra 0.5 syns for white kebab sauce)

1 teaspoon plain flour
1 teaspoon dried oregano
Ha;f teaspoon dried Italian herbs
Half teaspoon garlic powder
Half teaspoon onion powder
Quarter teaspoon cayenne pepper
1 teaspoon salt
Half teaspoon black pepper
500g Lamb mince

Combine all the ingredients. Work the mixture well with your hands, pounding & kneading until there are no air pockets. It shold be a smooth mixture.

Shape into a loaf shape, and place on a baking tray (preferably on a wire rack) and put in the oven at 180c for 1 hour 20 mins. Turn the loaf over halfway through cooking.

Remove from the oven & wrap in foil. Let it rest for 10 minutes while you warm pitta bread & prepare salad. Unwrap the meat and slice as thinly as possible. Add red or white kebab sauce to taste.

Leek & Bean hash

 

 Serves 2, 1 HEA per portion, 0 syns on Extra Easy / Green

Ingredients

  • 2 medium baking potatoes (approx 320g each), diced
  • 1 large leek (approx 310g), finely chopped
  • 200g of baked beans
  • 2 HEA of cheddar cheese, grated
  • 2 medium eggs
  • Frylight

Method

  1. Cook the potatoes in lightly salted boiling water for 4-5 minutes, or until tender.
  2. Meanwhile, heat frylight in a large frying pan and fry the leek for 4-5 minutes, or until soft.
  3. Stir in the potatoes, beans and grated cheese. Season with salt and pepper and mix together. Cook over a medium heat for 10-15 minutes, only stirring every 3-4 minutes to allow the underside to brown and crisp a little each time. Continue to cook until the hash is evenly browned.
  4. Meanwhile, heat frylight in a separate frying pan and fry the eggs over a high heat until the white is cooked and the yolk is just set, or cooked to your liking. Season with salt and pepper.
  5. Divide the hash evenly between the plates and top each with a fried egg.

Hawaiin Pasta Bake




1 red onion, chopped
Half tin sweetcorn/half a cup of frozen sweetcorn
Chopped fresh pineapple
1 tub passata
cooked pasta
1 gammon round, chopped
100g mozzerela



Serves 4, HEA per portion, syn free on EE

Put all the ingredients in a large pasta dish, and top with the cheese. Put in the oven for 30 mins til the cheese has all melted.

Butternut Squash Risotto

  •  Free on EE & Green (hea for parmesan)
  •  
  •  
  • 1 onion, chopped
  • Frylight
  • 1 butternut squash peeled and diced
  • 200g (7 oz) risotto rice
  • 600ml (1 pint) vegetable or chicken stock
  • 30ml (2 tbsp) grated parmesan, to serve (hea)
Method
  1. Fry the onion gently in the frylight until soft but not browned.
  2. Add the squash and rice and stir for 2 minutes. Add 2 ladles of stock and bring to a simmer.
  3. Cook, stirring until almost all the stock is absorbed. Add the rest of the stock a little at a time, cooking until each addition is absorbed, the squash is soft and the rice is al dente and creamy. Season well. Divide between 4 bowls and sprinkle with cheese.

Chinese chicken & egg fried rice

I used Joes chinese chicken steaks for this (syn free and delicious) and made the egg fried rice.

Egg Fried Rice (free on EE and Green)
I use rice thats been cooked then cooled down, otherwise it goes all sticky. Use 1 cup of cooked cooled rice per person. Fry spring onion in some fry-light & 1 teaspoon chinese 5 spice (if you have it). Add the rice, and stir fry until cooked through. Add peas & sweetcorn & 2 tsps soy sauce. Once all that is heated through, make a well in the middle, and add 2 beaten eggs. Stir the eggs quickly while they set, and then gradually mix into the rice.

Beef & bean chilli

beef and mixed bean chilli with rice (serves 4)
Ready in 1 hour
1 onion, peeled and finely chopped
3 garlic cloves, peeled and finely chopped
1-2 tsp cayenne pepper or paprika
1 tsp ground cinnamon
2 tbsp ground cumin
511g/1lb 2oz extra lean minced beef
400g can chopped tomatoes
1 red and 1 yellow pepper, deseeded and cut into small bite-sized pieces
Salt and freshly ground black pepper
400g can red kidney beans in chilli sauce
400g can mixed beans in brine, drained
312g/11oz dried long-grain rice
Yogurt & mint to garnish (fat free yogurt, 1 teaspoon mint sauce, grated cucumber)

  1. Place a large, non-stick frying pan over a medium heat. Add the onion and garlic and stir-fry for 1-2 minutes. Add the cayenne pepper or paprika, cinnamon, cumin and minced beef and stir-fry for 5-6 minutes.
  2. Add the tomatoes and peppers and bring to the boil. Season well, cover tightly and cook over a low heat for 20-25 minutes.
  3. Add the beans, stir to mix well and return to the heat for another ten minutes.
  4. Meanwhile cook the rice according to the packet instructions, drain and keep warm.
  5. Remove the chilli from the heat and serve in warmed bowls with the rice. Top with the yogurt sauce.

Roasted salmon with fennel & tomatoes

Syn free on EE and red (I served mine with boulangerie potatoes)


  • 2 medium fennel bulbs
  • 2 tbsp chopped flat-leaf parsley
  • zest and juice 1 lemon
  • 175g cherry tomatoes
  • Frylight
  • 2 salmon fillets , about 175g each 
  1. Heat oven to 180C/fan 160C/gas 4. Trim the fronds from the fennel and set aside. Cut the fennel bulbs in half, then cut each half into 3 wedges. Cook in boiling salted water for 10 mins, then drain well. Chop the fennel fronds roughly, then mix with the parsley and lemon zest.
  2. Spread the drained fennel over a shallow ovenproof dish, then add the tomatoes.Spray with frylight, then bake for 10 mins. Nestle the salmon among the veg, sprinkle with lemon juice, then bake 15 mins more until the fish is just cooked. Scatter over the parsley and serve.

Sweetcorn Fritters & salsa



From the Extra Easy cookbook

Ready in 45 minutes
Serves: 4
Syns per serving: Free on Extra Easy

ingredients

400g can sweetcorn kernels, drained
200g can tuna in spring water, drained
3 medium potatoes, unpeeled and whole
salt and freshly ground black pepper
4 tbsp each of finely chopped chives,
coriander and parsley
1 egg, lightly beaten
low calorie cooking spray
for the salsa
4 plum tomatoes, finely chopped
½ cucumber, finely diced
½ red onion, peeled and finely diced
3 tbsp chopped mint
juice of 1 lemon

method

1. Preheat the oven to 180°C/Gas 4. Place the sweetcorn and tuna in a large mixing bowl.
2. Place the potatoes in a pan of lightly salted water, bring to the boil and cook for 15 minutes, making sure they are not fully cooked. Drain, allow to cool slightly and then peel using a sharp knife. Coarsely grate the potatoes into the sweetcorn
mixture. Add the chopped herbs and egg and season well.
3. Combine the ingredients together using your hands and then divide into 12 portions. Shape each portion into a flat ‘cake’ and place on a non-stick baking tray lined with baking parchment. Spray with low calorie cooking spray and place in the oven for 15-20 minutes or until lightly golden.
4. While the fritters are cooking make the salsa by combining all the ingredients together in a bowl, season well and chill until required. Serve the fritters with the salsa.

Pesto Rosso

Serves 2 at 1.5 syns per portion on EE

2 chicken breasts
150gi pasta (I used Casereccie to keep as close to the original recipe)
chopped parsley
4 spring onions
2 tbsp weight watchers cremé fraíche (1 syns)
1tbsp red pesto (2 syns)
Juice of a lemon
Mixed herbs (I used oregano & basil)

Boil the pasta as per instructions on teh packet.

Chop & fry the chicken with the lemon juice and mixed herbs until cooked.

In the last minute add the spring onions and parsley.

Drain the pasta and add to the chicken.

Add cremé fraíche and pesto and heat through.

Chicken Noodle Soup

 

 

 

Syn free on Extra Easy!

  • 900ml chicken or vegetable stock
  • 1 boneless, skinless chicken breast, about 175g/6oz
  • 1 tsp chopped fresh root ginger 
  • 1 tsp Chinese 5 spice 
  • 1 garlic clove , finely chopped
  • 50g rice  noodles
  • 2 tbsp sweetcorn , canned or frozen
  • 2-3 mushrooms , thinly sliced
  • 2 spring onions , shredded
  • 2 tsp soy sauce , plus extra for serving 
  1. Pour the stock into a pan and add the chicken,5 spice, ginger and garlic. Bring to the boil, then reduce the heat, partly cover and simmer for 20 mins, until the chicken is tender. Remove the chicken to a board and shred into bite-size pieces using a couple of forks.
  2. Return the chicken to the stock with the noodles, corn, mushrooms, half the spring onions and the soy sauce. Simmer for 3-4 mins until the noodles are tender. Ladle into two bowls and scatter over the remaining spring onions, herbs and chilli shreds if using. Serve with extra soy sauce for sprinkling.

Jamie Olivers Fish pie

This is the best fish pie I have ever tasted!



Serves 2
Syns = FREE + 1 HEXA

Potatoes
2 x Carrots, Grated
2x sticks celery
1/2 x Red Chilli, finely chopped
84g Reduced Fat Cheese, grated
2 x Tomatoes, chopped
Handful of spinach
150g Prawns
100g Cod
100g Smoked Haddock
1/2 Lemon
Dried Parsley
Salt and black pepper

1. Peel and chop potatoes and boil until soft. Mash, season and put to one side.

2. In a oven proof dish add your grated carrot, celery cheese, tomatoes and spinach.

3. Chop your fish into bitesize pieces and add to the dish along with the prawns. Squeeze over the lemon juice and season with salt, black pepper and add a sprinkle of parsley.

4. Top with the mash potato, spray the top of the mash with frylight and pop in the oven for about 30 mins..

Slow Roasted Chinese Beef

Slow roasted Chinese beef

Serves 2, 1.5 syns per portion on EE (and red if you omit the rice)

350g braising beef

5 spring onions, chopped

1 garlic clove, peeled & sliced

Half an inch of grated ginger

1 red chilli, sliced

1 tsp Chinese 5 spice

1 half star anise (optional)

1 tbsp brown sugar (2.5 syns)

2 tbsp rice wine vinegar

1 tbsp soy sauce

Heat the oven to 150C/fan 130C/gas 2. Put all the ingredients , making sure to reserve a little of the chilli and spring onion. Add 150ml water, stir well then put on a lid. Cook in the oven for 2-2 1/2 hours until the meat is meltingly tender. If you want the sauce a little thicker, scoop out the meat and boil hard for 5 minutes. Sprinkle the reserved chilli & spring onion on top to serve.

Serve with bok choi or greens and steamed rice.

One-pot breakfast

Syn free on red & extra easy


3 eggs
2 syn-free sausages
2 rashers of lean bacon, chopped
1 spring onion, chopped
1 large mushroom sliced
28g of cheese, grated (hea)
5 cherry tomatoes

Spray a tray with frylight, and add the sausages. Cook in the oven for 10 minutes. Whisk the eggs and add the grated cheese. Remove the tray from teh oven, add the chopped bacon & veg, and then tip in the egg mixture. Return to the oven for 15 minutes.

Easy peasy BBQ sauce

1 tablespoon Heinz BBQ sauce

half tub fat free fromage frais

Mix, and heat gently in a saucepan. Dont let it get too hot/bubble, as it will curdle!

Coronation Chcken

1/2 tub mullerlight apricot yogurt

2 tablespoons hellmans Extra Light mayo

Curry powder (to your own taste)

2 chicken breats, cooked & cubed

Rice Pudding

Yestrday I made a lovely bowl of SW rice pudding!

1 cup of pudding rice
1.5 cup of water
half cup milk from allowance
2 tbsp Splenda
dash vanilla essence
cinaammon to taste

Simmer the rice in the milk/water/splenda mix for 20 mins. Add the vanilla & cinnamon to taste. Serve!

BBQ Sauce recipe

Have had a request from Steph for the recipe for the BBQ sauce I used for last nights dinner. Please feel free to ask for any recipe that I use, I am happy to share!



BBQ sauce recipe

you will need
1 onion, peeled and roughly chopped
1 tsp mild chilli powder
227ml/8fl oz passata
3 tbsp artifical sweetner
4 tbsp balsamaic vinegar
1 tbsp worchestershire sauce
1/2 tsp mustard powder
salt and freshly ground blacke pepper.

spray a pan with fry light and saute the onion and chilli powder over a low heat for 5 minutes until softened.

stir in the remaining ingrredients, bring to the boil and simmer for 10 minutes untill thickened. check the seasoning before serving hot or cold.

syn free on both days ready in 20 minutes serves 4 and freezer friendly.

Great as a marinade, dip or on ribs etc.

Only 0.5 lb. Such a disappointment! I have been so good all week, worked out with the personal trainer twice and thats all I lost? Not very happy :(

6.5 lbs! Yes! So thats all the xmas weight, plus another 1.5 lb off. I got my stone award too. I am now 1 stone 1.5 lbs down. Feeling very chuffed & motivated.
